Macerated chardonnay from the legendary domaine of Henry-Frédéric Roch, close to Vosne-Romanée and Nuits-Saint-Georges. Skin contact for 2 weeks gives it a light orange hue and very interesting aromas. I smell hints of green grass, mint and other freshness, followed by heavier aromas of ripe peach, honey and bees wax. The wine has a light, precise structure. It will certainly gain complexity if you leave it to develop another two or three years but is very delecious already. Drank it with mozzarella, grilled peaches and sechuan pepper at Lux, Rotterdam. Very lovely pairing.
