Tasting Notes: This garnet wine presents cherry, dark fruits, sawdust, and spring flowers on the nose. This is followed by an acid-forward flavor that is slightly tannic with raspberry and red fruits on the palate. Undertones of artichoke and black birch follow. The aftertaste is smooth and pleasant. For a wild fermented wine this is clean and easy drinking, it doesn’t ask much of the drinker but to be enjoyed. Enjoy with fresh strawberries, chocolate, or bloomy rind cheeses.

Aroma: Distinctly a mixture of tart cherries and cacao Palate: Leathery, earthy, and tart. Some pepperyness as well. Mouthfeel: Pleasant acidity and velvety tannins. Light astringency. Aftertaste lingers with the same feeling as eating very dark chocolate. Would be great with a fatty dish such as leg of lamb or a thick peppered steak

This full bodied wine boasts a deep, dark ruby color with an intense burst of wild blackberries and cherry, with notes of leather, wild mushroom, vanilla, and mocha. It has soft tannins and enough acidity to cut through the ripe/dried fruit and rich savory elements.
