Direct pressing, cold decanting for 36 hours. Spontaneous fermentation with cold control in 5000l stainless steel tanks. End of fermentation in the bottle. Ageing minimum of 24 months. Clarified and degorged by hand. No shipping liquor is added, only wine itself
