Enstase? What’s that? Inspired by a quote from Bruno Quenioux’s book: “Wine is not drunk like alcohol. For those who know how to welcome it, it transports you towards something within oneself, something deep. It is an enstase…”.
More importantly, however, it is a wine bar opened by Claire Leflaive and Pierre-Olivier Soares last summer in Beaune, with an original concept.
Claire, who is highly passionate about the psychology of wine, the taste and olfactory emotions of childhood, (she even created an online personality test), wants to hear us talk about wines, our personality, our favorite color or even a smell from our childhood that makes us vibrate. They then take care of finding the beverage that suits you. Be careful though, they like to surprise!
The cellar is magnificent, entirely built from natural materials. On the drinks menu, there’s a great natural wine selection with gems, weirdos, fine and emblematic wines, original and classically well-made ciders, surprising and fun beers, kefirs, kombuchas, artisanal and low-sweetened fruit juices from from all over France and from the rest of the world. "We are committed to visiting everyone we stock, we know each winemaker, their wines, their personality and sometimes their resistance to alcohol (although to us wine is not an alcohol but a drink to be shared)”.
Today, Enstase la Cave à manger opens in Beaune, Burgundy. Two evenings a week (Thursdays and Fridays), a secret passage through a piece of furniture opens and TA-DA, a kitchen appears with Pierre-Olivier behind the stove! Dishes to share are made from noble and elaborate regional products, street food (bao, gua bao) desserts… All served on colorful dishes on a communal table or if you prefer at the suspended bar, the choice is yours!
