Our estate is made up of 7 hectares, 1 hectare of which is dedicated to vines.
Our vines are composed of Chasselas, Chardonnay, Muscaris, Gamay, Pinot noir, Gamaret, Garanoir, Divico.
We vinify our approximately 6,000 bottles ourselves at the Domaine for 1 to 2 years. Our wines are aged in barrels.
All wines are certified Natural by the ASVN.
The aromas and flavors are very powerful and reflect the full range of the grape varieties' aromatic ranges. The barrel-aged wines are best drunk immediately, but will appreciate years of aging, being constantly evolving, as they are living wines that have not been stabilized with sulfites. Each year you will be able to appreciate an evolution that will delight and impress you.
What is Natural Wine:
It is a wine made only with pure grape juice, without any additives, without sugar, without sulfites, without flavorings or other products. It is racked and unfiltered.
Alongside the vineyard, we grow medicinal plants, small fruits, olive and lemon trees, as well as large-scale crops such as ancient cereals, chickpeas, lentils, mustard and others.
Wild truffles are also on our menu and we are the founders of the first truffle market in Switzerland which takes place every year on the last Saturday of October in Bonvillars.
The entire estate has been certified Bio-Bourgeon and Demeter since 2008, and also PSR for vegetables and berries.
We also produce our own vegetables, which delight our guests during the meals on the farm that we organize on request, for our various cooking classes, as well as for our catering service.
