Fabien Vallélian is Head of Culture at the historic Domaine des Faverges in Saint-Saphorin, in Lavaux, established by the monks in 1138.
Among other things, he produces under his own name a series of natural wines without additives, from neighboring vineyards whose origin he keeps secret.
He produces one of the flagship vintages of the Swiss natural wine world, "Le Grand-Papa", from old Gamay vines planted by his grandfather in 1957, with less than 300 bottles depending on the vintage, an extraordinary vintage.
