With years of training spent all around the globe, particularly in New Zealand, Fabien Vallélian returned to work as a culture manager in his much-loved Lavaux in 2017.
In 2025, Fabien took over the iconic Domaine Pierre Fonjallaz. In addition to his terroir-driven Calamin and Dézaley wines, he produces a range of natural wines made without additives, from plots cultivated largely with Xavier, a long-time friend, hence the name: Merlot Poto!
He produces one of the flagship wines of the Swiss natural wine world, "Le Grand-Papa", from old Gamay vines planted by his grandfather in 1957, with less than 300 bottles depending on the vintage, an extraordinary wine.
