Today, this adventure comes to life in the heart of the Valais vineyards, with the ambition of creating sincere wines, rooted in their terroir and respectful of the environment.
The approach is based on organic farming and biodynamics, with constant attention paid to the plant and soil regeneration. This approach aims to strengthen soil vitality, vine health, and ecosystem balance, while respecting agricultural traditions.
The grapes are hand-harvested and carefully sorted directly in the vineyard. Fermentation, driven by indigenous yeasts, allows for a faithful expression of the terroir. The wines are then aged for several months in barrels, on lees, to reveal all their complexity. Bottling is carried out using a two-beaked goat's-foot bottle, directly from the barrel, respecting traditional techniques.
