Ancestral Confiscat es un espumoso natural que no juega a ser cava clásico. No va de crianza larga, etiqueta solemne y copa de brindis de boda. Va más de Xarel·lo libre, burbuja viva, fruta blanca, cítrico, levadura fina, manzana, piel de limón, hierba seca y ese fondo ligeramente salino/amargo tan de la variedad. No es un cava clásico ni falta que le hace. Es un pét-nat fresco, seco, directo y muy gastronómico, pensado para beber con hambre, con manos en la mesa y algo para picar cerca.
