Julien, by Bistro Louis Séverine. A natural Riesling from Alsace that moves away from the more academic expression of the grape and enters a freer, more textural, more gastronomic register. Vinified with a short maceration and minimal intervention, it keeps the citrus tension and mineral backbone of Riesling, while gaining volume, skin contact, depth and a subtle rustic edge that feels beautifully integrated. A wine with precise acidity, direct energy and that living character sought by those who enjoy natural wines without makeup: no excess, no artifice, with a clear sense of origin and a very honest reading of the grape. To be enjoyed slowly, with cheese, saline dishes, or simply with someone who understands that a good wine does not always need too much explanation.
