Niu Celler - Paula y Ferran
Niu Celler is a young project that has just started, since we are 25 and 26 years old. During the 2022 harvest we decided to start and launch ourselves into making three wines: red, white and sparkling (ancestral).
Our winery is in Barberà de la Conca, a town near Montblanc, in Conca de Barberà. In this town there is the first cooperative winery in Spain, which they transformed into an entrepreneurial project so that people wanting to start their winery but with the right financial resources, could start. This project is called Viver de Celleristes. That is why we do not have our own winery, but right now we share space with other winemakers, with the intention of making more production and being able to build our own winery.
In 2019 we started doing small tests with ancestors in a hut in the middle of the field, to see how the fermentation issue worked and how we could control it. This is where our passion for the world of natural wine came from, since it was clear from the beginning that we had to respect nature and life. That is why our wines are totally organic, certified by the CCPAE.
We have started making 2,200 bottles between the three wines we have, which are a red Garnacha tinta, a white Chardonnay and from this same medium fermentation we bottle and our ancestral sparkling wine comes out, also Chardonnay. The three wines are natural, without additives, just grapes and nothing else. The fermentations are completely spontaneous, which is why we do not intervene in the process, since the wine is completely alive and follows its path naturally. The only thing we control is the temperature, since this is how we achieve the results with which we feel most comfortable.
About three years ago we planted a small vineyard to be able to start taking care of it in a biodynamic way. At the moment we are not making wine from there because we do not have grapes yet, but the intention is that in the 2023 vintage we can make a new rosé wine from that estate.
The bottles may have sediment and/or CO2 because they are live wines. Each bottle is different and that is why it makes them special. Even if it is from the same year, no two bottles will be the same and we believe that this is what makes them unique. We try to take maximum care of our product like the land that gives it to us.
