In 2022, Katrina traveled to the village of Osorno, Chile, at the gateway to Patagonia, in search of hidden vineyards and to practice the craft of traditional natural winemaking. It was there that she met Stanislas Demarquet, who joined the project in 2023.
Together, Katrina and Stan have worked across South Africa, Chile, Bolivia, Peru, France, and Spain - immersing themselves in the ancient techniques of viticulture and winemaking. In 2024, they relocated all production to Aranda de Duero, Spain, where they now produce around 8,000 bottles annually from organic Ribera del Duero grapes. They also take care of 2 hectares of old, field-blended, goblet-trained vines, aged between 60 and 100 years.
Their approach champions organic farming, patient winemaking, and wild yeast fermentations, with minimal use of SO₂ and no other additives. For them, natural wine is more than a product—it’s a lifestyle. Their philosophy extends beyond the vineyard: eating organic, farming consciously, buying local, consuming less, traveling sustainably, and embracing reuse and recycling. Community and collectivism are central to everything they do.
