We are a small family winery located in Carrión de Calatrava (Ciudad Real) where we make wines in the traditional way, adding nothing. We work with grapes from our own vineyards, typical varieties of our area such as Airén and Cencibel.
The Airén vine is about thirty years old, and is goblet-trained and ungrafted. No pesticides or herbicides are used in the vineyards. Currently, five wines are made from these two varieties:
- Red wine:
Cencibel del año (young wine) . Maceration and alcoholic fermentation at the same time, pressing and stainless steel tank.
We find a wine with a dark, deep garnet color, aromas and mouth with notes of red fruits and liquorice.
Cencibel in a typical La Mancha jar . This is a wine that spends a year in stainless steel, then it is left for 3-6 months in a jar to obtain a rounder, more mineral wine but still retaining the aromas and flavor of red fruits.
- White wine:
Airén El Jalbegandero. This is a late harvest wine that gives us a very powerful orange-yellow tone, without maceration. On the palate, it has herbal tones and smoky touches.
Airén Orange. Maceration for five days, pressing, and stainless steel vats. It produces a very powerful golden orange that enhances the herbaceous flavor and spices, such as fennel.
Airén Pomposo. Pet'Nat with a bright golden color, with notes of apple, very fresh and easy to drink.
