Where Portugal meets Spain, Bar Salto is Extremadura’s first natural wine bar. By winemakers, for wine lovers: A collaboration between the São Mamede Wine Project and botanical food mastermind Gino Marengo from Patu Restaurant, it’s a place where vegan food meets low-intervention wines, mountain air, and wild creativity. Come taste nature in its most delicious form.

Local bottles, deep knowledge, and pure borderland joy Bar Salto is a rare gem for natural wine lovers travelling through the wild hills between Spain and Portugal. The list features true local heroes: bottles made just a few kilometres away, including wines from nearby vineyards. It's the kind of place where the person pouring your glass has walked the vines and knows the winemakers personally. The staff are genuinely enthusiastic and incredibly knowledgeable, happy to share stories behind each bottle without ever making it feel pretentious. Whether you're deep into natty wines or just curious, you'll feel right at home. The food is all vegetarian and designed to pair: seasonal, simple, and full of flavour. The terrace is stunning at sunset, with views over the old smuggling routes towards Marvão. If you want to drink natural wine with a real sense of place, surrounded by people who live and breathe it, Bar Salto is a must.
