Kovesd - Attila Sánta and Zoltán Varga
The Kövesd project was born in 2018 from an idea by two enthusiastic friends, Attila Sánta and Zoltán Varga. The winery originally grew out of the Alvárium apiary, which is still in operation today.
We consider it an honor when someone contributes to our work by tasting our wines and honeys. For us, natural wine is not a dogma or a trend to follow, but rather, based on our current knowledge, the only way to truly express the characteristics and energies of our terroir. We start from the basic recognition that humans are incapable of fully understanding the processes of nature and cannot create anything more beautiful or better than its divine harmony. We simply create the conditions necessary for this. We work gently, using gravity instead of pumps, with traditional basket presses, and the musts ferment spontaneously. The wine is bottled without clarification or filtration.
We only have our own vineyards, which we have cultivated using biodynamic methods from the very beginning. The vines are trained and pruned according to the Simonit system. Our plots are certified as both "organic" and "Demeter."
Our vineyards are located in the southernmost and driest corner of Slovakia, on the border between the villages of Garamkövesd and Bajta.
The soil is volcanic, dominated by loess brown forest soil, with andesite tuff underneath. The Kovácspataki Mountains, wedged between the Börzsöny and Pilis ranges, are surrounded by the Danube, Garam, and Ipoly rivers. These geographical features create a microclimate that makes the wines produced here unique.
Our vineyards are not neighbouring other vineyards, but are surrounded by protected, wooded areas.
