Location: Lower Austria, Austria Concept: organic, biodynamic (respekt-BIODYN), minimal SO2 addition (natural) Grapes: 100% Pinot Noir Aromas: forest soil, dried plum, black olive, cocoa powder, soy sauce, patchouli, graphite, sour cherry, blood orange, bitter chocolate, dried herbs Palate: light body, fresh acidity, gentle tannins, mineral grip, good mouthfeel, complex with varietal typicity Other information: selective harvest by hand, 3 weeks maceration, whole bunch (100%), spontaneous fermentation in wooden vats for 4 weeks, aging for 12 months in small 300L oak casks and 6 months in big oak casks, no fining, unfiltered
