Crafted from hand-harvested Bical, Cercial, Maria Gomes, and Sercialinho grapes grown on a mosaic of clay-limestone and sandy soils, Duckman's Quaaaaq Quaaaaq white wine is a vibrant expression of Bairrada. The 20-year-old vines yield grapes that undergo spontaneous fermentation in a combination of chestnut and French oak barrels using natural yeasts. After three weeks of temperature-controlled fermentation, the wine rests on its lees for six months with regular stirring. Finally, it spends another six months in a mix of aged and stainless steel barrels before bottling, all unfined and unfiltered. The result is a white wine with moderate acidity, offering refreshing notes of cucumber and lemon peel with a lingering herbal finish.
