I have been making "Nigori Wine" based on that philosophy for 28 years. Feel the energy emitted from the individuality of the grapes each year and make wine. This simple and straightforward thing meets me. In particular, I feel that "Labrusca (raw edible grape variety)" is engraved with DNA unique to Japan, and I have a dream about the wine produced from that Labrusca. Of course, it is also for Vinifera (a wine-only variety). We have decided to go to Nanyo City, Yamagata Prefecture, which has a long history as a grape-producing area, as a place to realize that dream.
