During her master's thesis in Plant Biology and then her PhD in Genetics and Pathology of the Grapevine, Sofia studied the vineyards on her family's land, discovering an incredible heritage of centuries-old vines and almost extinct local varieties. She then decided, with her partner Giancarlo, a specialist in
Environmental Economics, to open a farm with a cellar open to the public to showcase the wines they produce according to their philosophy. No additives are used in the cellar to manage the winemaking process, precisely because each bottle must be a representation of the variety and the growing season it has.
brought to the vintage's production. All wines, both red and white, are macerated, unfiltered, and aged only in 54-liter glass demijohns before being bottled. Cellar procedures are manual and guided by time, temperature, and patience.
On the other hand, the grapes in the vineyard, the fermentations, and the wine are constantly monitored, and continuous analyses allow us to study the progress of the winemaking process.
The vineyards, like the rest of the farm, are managed using regenerative agriculture techniques so that the crop contributes to the well-being of the ecosystem that hosts it. Most of the
The vines follow a planting pattern of 4.5 meters along the row and 3 meters between the rows. The distance between the plants is so large because the goal is to let them age so that they acquire defense capabilities and
integrate positively within the ecosystem. The pruning method is Sylvoz, alternating with spurred cordon. Winter and summer pruning are performed exclusively by
The owners are a true study in plant growth and health. Vineyard diseases are controlled through careful observation and meticulously selected practices to minimize environmental impact. Furthermore, a vineyard expansion was carried out using PIWI, new varieties resistant to fungal grape diseases. Fertilization is exclusively organic and is used to improve soil fauna and the soil microbiome.
