In the vineyard, our work is mostly manual, aimed at preserving and improving soil fertility to increase its moisture content and help individual plants find their balance. In the fall, we use green manures made from fava beans and legumes. In the summer, we use small amounts of copper and sulfur, only when necessary.
Our winery is located on a hillside at 450 meters above sea level, facing south, overlooking the valley and Mount Tezio, which dominates the first part of the middle/upper Tiber Valley. In the cellar, we avoid anything that differs from the raw material: the grapes. We follow spontaneous fermentations on their own indigenous yeasts, without temperature control and avoiding the use of winemaking additives except for minimal doses of SO2, if the vintage requires it.
Fermentation takes place primarily in steel and fiberglass; our production ranges between 5,000 and 6,000 bottles per year.
