There are two vineyards: one in the hills of Perugia, about 180 meters above sea level, and one overlooking Lake Trasimeno, about 500 meters above sea level. The company is certified organic and also practices biodynamics. Tractors are used for mowing and working under the vines. Harvesting is done by hand: the grapes are collected in crates and processed in the cellar, usually destemmed whole or without destemming, and fermented without temperature control. Vinification takes place in steel, fiberglass, and wooden tanks. Small amounts of sulfites are added only when necessary.
