Scarpeto di Sotto Farm - Daniele Tinti
Tinti Chianti is a family-run business based in the hills of Certaldo (Tuscany). The company cultivates 7 hectares of vineyards and 1 hectare of olive groves, adopting an agricultural and production approach focused on naturalness and transparency.
Vineyard and agronomic management
- Area: 7 ha vineyard + 1 ha olive grove
- Training system: Guyot
- Red grape varieties (about 80%): Sangiovese, Cabernet
- White grape varieties: Trebbiano, Malvasia, San Colombano, Viognier
- Certified organic since 2010 (ICEA)
- No chemicals are used in fertilization: only organic fertilizers are used.
Cellar: fermentations, interventions and sulfur dioxide
- In the cellar the approach is essential and non-interventionist:
- Spontaneous fermentations, without the use of selected yeasts
- No clarification
- Filtration only when needed, with filter media up to 5 microns
- Total SO₂ in bottle < 40 mg/L
- Only additive used: SO₂, 2 g/hl added before bottling.
Refinements
- Aged in cement and wood
- Use of French oak barriques in 4th–5th passage (not new wood, for a more delicate impact).
