The vineyards are mainly located in Sant'Amato, at an altitude of 500 meters, where the vines grow on terraces supported by ancient dry stone walls. Another vineyard, rented, is located in Faltognano, also in Vinci, at an altitude of 350 meters. Overall, the company has about 2 hectares of vineyards owned and 1.5 hectares rented.
The vineyard management follows principles that respect nature, using copper, sulfur, zeolite and biodynamic preparations such as 500 and 501. The harvest is carried out strictly by hand, with collection in crates to best preserve the quality of the grapes.
In the cellar, fermentations occur spontaneously, without temperature control, and the use of sulfur is limited to about 5 grams per quintal of grapes. To refine the wines, the company uses terracotta amphorae, as well as concrete and steel tanks, maintaining an approach that enhances the authentic expression of the territory.
