The approximately seven hectares of vineyards are immersed in an unspoiled natural environment, surrounded by woods and fields and far from other farms. This location fosters biodiversity and helps preserve the ecosystem's balance. The significant temperature variations, natural ventilation, and extraordinary soil diversity—marl, sand, Pliocene soils, and clay—contribute to the grapes' unique characteristics.
Production focuses primarily on Sangiovese, Tuscany's iconic grape, alongside Trebbiano Toscano and other traditional varieties. In the vineyard, Le Verzure adopts sustainable and biodynamic practices, with the support of agronomist Adriano Zago. Work is predominantly done by hand, with interventions only performed when absolutely necessary, with great attention to soil health, responsible water management, and the appreciation of people's work.
The harvest is done exclusively by hand, carefully selecting the finest bunches. In the cellar, the goal is to complement the wine without altering its identity: fermentation occurs spontaneously thanks to indigenous yeasts, and intervention is kept to a minimum.
Most of the wines are fermented and aged in buried terracotta amphorae, a choice that favors slow and natural evolution, preserving the character of the grape and the vintage. Sulfur dioxide is added only at bottling and in very small quantities.
Le Verzure produces wines that reflect the richness of the soil, the climate of each harvest, and the most authentic identity of the Tuscan region. Because, as the winery likes to remind us, "Wine is made in the vineyard. The cellar is responsible for preserving it."
