Tanca Nica - Nicoletta and Francesco Ferreri
Tanca Nica, in the Pantelleria dialect, means small hilly land cultivated and arranged in terraces.
Nicoletta and I manage a total of two hectares of vineyards, with plants often over a century old. We grow Zibibbo, Catarratto, Nivuro Nostrale, and a few Inzolia plants.
All work is done by hand, using a hoe and our hands: we accompany the life contained in the grapes from the vine to the glass.
Thanks to the constant wind on the island, phytosanitary treatments are minimal and carried out only with sulfur and rarely copper.
In the cellar, fermentation occurs spontaneously: we use small vats in which the grapes are pressed, eliminating the need for any type of temperature control. The wines age in wooden and fiberglass barrels and decant naturally without filtration or fining.
In March, with the waning moon, we bottle by gravity.
