The vineyard covers a total area of 1.3 hectares, and its roots grow in poor, chalky-limestone soil. The vineyard is grassed with spontaneous vegetation, and during the autumn, the grassy mantle consists primarily of wild sainfoin, more commonly known as "Sulla," which provides a good nitrogen content to the soil. Hence the decision to avoid fertilizing and sowing legumes. By mowing the spontaneous grasses, I create a mulch of about 10 cm, which significantly reduces soil erosion and the effects of low rainfall. Cultivation of the under-rows and harvesting are done manually, minimizing mechanical intervention. I meticulously follow the principles of sustainable agriculture, and at the heart of everything is the rejection of pesticides, herbicides, and all substances harmful to the environment and living beings. Treated exclusively with sulfur and copper: 2-3 treatments per year.
My philosophy is to accompany the plant throughout its natural growth cycle, which is why I monitor the vineyard daily through all its phenological stages. Yields are low, but high-quality, allowing me to create wines with personality that can tell their own story.
"Wine is made in the fields" is the phrase that best reflects my vision of wine. I therefore reiterate the importance of dedicating all my energy to the fields with the goal of bringing healthy, quality grapes to the cellar. The musts ferment spontaneously primarily in fiberglass tanks, without any temperature control, following a craftsmanship worthy of the origin of my grapes, to create authentic, tenacious, and powerful wines, just like the winemakers who produce them.
