We cultivate an ancient vineyard over 70 years old using the alberello system. The soil is loose, of volcanic origin, and is terraced with dry-stone walls made of lava stone. We are not certified, but to say we farm organically is an understatement. We don't just follow the regulations, which prohibit the use of synthetic products, but we also embrace principles of ethical work, environmental respect, landscape protection, and more. Etna has always been a region suited to wine production, but after the First World War, most of the vineyards were abandoned. Only in recent years has this winegrowing area been revalued, although traditional alberello systems are often replaced by newer ones. The ancient Etna terraces, the fruit of generations of farmers' labor, which forced mechanical cultivation to be limited or even eliminated, are being eliminated, causing profound changes to the Etna agricultural landscape. On the contrary, we are reclaiming and enhancing this land because the plants clinging to this land tell a story; Because, with the practice of grafting in the field, Nerello Mascalese and Carricante have different nuances; because the vineyard is rich in pear, apple, peach, olive, and cherry trees, all native varieties that enhance biodiversity; because, even with a 1 x 1 planting pattern that forces us to grow everything by hand, we like it. In the winery, we only perform essential processes; we use only indigenous yeasts, and the amount of sulfites used is kept to a minimum.
