4 hectares of vineyard, not yet fully productive; 2 hectares of olive grove; 1.3 hectares of almond grove (old trees being restored). I do not use any pesticides on either the almond or olive grove, except for weed control and soil tillage. In the vineyards, I use animal manure, green manure, sulfur, and copper (<500g/ha), applied by hand and/or with a caterpillar track. All fermentations occur spontaneously, and my interventions in the cellar are minimal and essential, ensuring that fermentations and refinements occur as smoothly as possible. I currently have no certifications, even though I already work organically.
