Having grown grapes organically for many years, inspired by the philosophy of Masanobu Fukuoka, we began producing our first wines in 2020, applying the same minimal intervention principles that guide our work in the vineyards to the winery. Spontaneous fermentations, no filtration or fining, and simple (minimal) processing are the foundation of our winemaking, where the quality of our grapes remains paramount. Our wines are a direct expression of the grapes, the vintage, and the terroir. The family-run winery is located in San Marzano Oliveto (AT), Piedmont. Our wines are eminently anarchic. We have renounced appellation certifications for most of our wines, including organic certification, to allow nature's infinite potential to express itself, without having to submit to abstract, pre-determined rules. The climate changes, the soil changes, the grapes change, and the wine changes. We believe the results we achieve on the land and in the cellar are a compelling testament to this. A particularly hot and dry year will produce a full-bodied, enveloping wine; a particularly humid year will produce a complex, aromatic wine, and so on, with infinite variations. This is what makes the farming and winemaking process so fascinating.
