Nebbiolo, Croatina, Vespolina, Uva Rara, Durasa and Erbaluce at around 300 metres above sea level on morainic soils of glacial origin, silt, red sands on clay with significant skeleton, porphyry, granite and pebbles of various colours and types, soils with very low pH.
The vineyards are managed with the utmost respect for the environment, without chemical weed control, but only mechanical interventions. The vines are grassed and we practice green manure on alternate rows.
We use sulfur and bicarbonate to control powdery mildew, copper and resistance inducers for downy mildew, and no synthetic products.
Manual harvest with selection and cleaning of the bunches in 18kg crates.
In the cellar, only spontaneous fermentations take place with indigenous yeasts present on the skins. No fining or stabilizing agents are used, and we do not filter. Sulfur dioxide is added in very small doses and sparingly depending on the year.
