Banzai è una gustosa espressione di Merlot in purezza proveniente da terreni argillosi e calcarei di Castillon Cotes de Bordeaux. Le uve vengono accuratamente diraspate e subiscono una breve e leggera macerazione per 7-8 giorni, in quello che viene chiamato ‘stile infusione’, ovvero senza rimontaggi o alcun tipo di agitazione aggressiva delle bucce e del mosto, che vengono lasciati fermentare con minore estrazione.
