Vinificazione e affinamento: dopo un’accurata selezione delle uve, diraspatura parziale e fermentazione di circa 15-20 giorni in mastelli di vetroresina con tre follature manuali giornaliere. Segue l’affinamento di circa 12 mesi in botti di vetroresina. Fermentazione malolattica svolta nella primavera successiva alla vendemmia. Affinamento in bottiglia di almeno 36 mesi.
