The vineyards are located around Lake Bolsena, and we use no chemicals either in the cellar or in the vineyard. Our vineyards are located near Montefiascone, on volcanic soil. Traditional cultivation methods include the use of copper and sulfur in small quantities.
The work in the cellar is done trying to keep the qualities of our grapes and the soil intact.
Our winery is located in Montefiascone, where everyone once made wine: we like the idea of returning to producing wine in the city center. Fermentations are spontaneous and uncontrolled, as our underground cellar manages to keep temperatures low during fermentation. The containers used are steel and fiberglass, while for longer aging we use small concrete vats. Once racked, the wine undergoes two or three rackings, and during this phase we use a very small amount of sulfites, which, however, remains below 20 mg/l for both whites and reds.
