GROTTE SANTO STEFANO In Grotte Santo Stefano our lands are divided into two estates: Poggio della Civetta and Santa Maria. Poggio Della Civetta is our oldest vineyard, approximately 4000m2. Planted on the tuff ridge that faces southeast among generous fruit trees, it is made up of mixed rows of Sangiovese, Malvasia, Trebbiano, Barbera and Grechetto Rosso that give life to HIULS, which in Etruscan means owl, our first wine, both white and red. Right on the hill, in 2019 we planted about one hectare of Grechetto Rosso, the ancestor of Sangiovese, one of the native and almost completely disappeared typical varieties of our territory. Santa Maria is where the farm is located and where in 2019 we planted part of our new vineyards: white grechetto and red grechetto, sangiovese, merlot, cabernet-sauvignon. Here we produce real/natural wine without the use of chemicals either in the vineyard or in the cellar, the only treatments are sulfur and copper. All the grapes are harvested by hand. Fermentations occur spontaneously on the skins, no mechanical temperature control, no filtration and clarification.
FILICUDI ISLAND On the island of Filicudi, 600km further south, there is the other expression of the company, the heroic, the Mediterranean one. On the island, only one hectare of the eight owned by the company on the island at the moment is planted with vines. The vineyard is positioned on 31 terraces of dry stone walls in a valley overlooking the sea facing east. Accessible only via an ancient mule track, all operations are done by hand, with the exception of a small motor hoe. Over 3000 vines have been planted, including Malvasia and wild grafts, to produce a dry Malvasia in the next few years, produced and bottled directly on the island. This vine, due to the type of planting and conformation of the land, combined with the uncontaminated nature of the island itself, has led us to manage our vines following the principles of biodynamics.
