We weren't born farmers, but we've discovered that artisanal wine can become a vehicle for promoting social sustainability and togetherness. Wine has brought us to the countryside, where we spend entire days working, sharing conversations and experiences that leave a lasting impression and create collective memory. In this time of uncertainty, a day in the countryside is our answer and our choice.
Although we are not certified as an organic company, in the vineyard we use exclusively sulfur and copper-based contact products to contain powdery mildew and downy mildew.
The soil, composed primarily of volcanic sand and pyroclastic material, is tilled only once a year. We believe in the soil's natural ability to generate fertility and drainage for our crops. We do not use fertilizers or herbicides.
In the cellar, fermentation begins spontaneously and is completed (including malolactic fermentation) thanks to the indigenous yeasts naturally present on the skins, without additives or inoculants. In this sense, for me, grapes are not a means but an end. All of my agricultural work is geared toward this goal: having a lively, healthy fruit that ferments completely naturally.
The wines are not filtered at any stage of the winemaking process. Racking (carried out according to the lunar phases) purifies the wine, in addition to the natural temperatures of our hilly winters and the weather.
Our wines do not undergo any deprivation or addition (except for a slight addition of sulphur dioxide during racking, which in any case never exceeds 30 mg/litre).
