Treatments are carried out with an orchard tractor. The vineyards are grassed with wild plants, without irrigation, and fertilized with horse manure every 4-5 years.
We use the first varietal harvested to make a pied de cuve; the yeasts are already present in the cellar, so fermentation occurs spontaneously. The only addition is a small amount of potassium metabisulfite.
We do not filter or clarify: the wines are clear thanks to the natural precipitation induced by the cold.
We don't have any certifications, although we're considering organic certification. Since 2018, we've only used certified products.
We have 2 rustic and welcoming rooms to sleep in the peace of the Casali.
No rose wines at the moment.
