Barolo 2021 di Borgogno Rivata è un Barolo DOCG prodotto da Nebbiolo nelle Langhe piemontesi. La cantina coltiva i propri vigneti tra La Morra e Guarene, interpretando il territorio con un approccio legato alla tradizione. Per il Barolo il produttore indica fermentazione spontanea, una macerazione di circa 30 giorni e un affinamento di due anni in botte grande, seguito da un anno in vasca di cemento. Nel bicchiere esprime il carattere classico del Nebbiolo, con frutto rosso, spezie e sfumature balsamiche. Il sorso è secco e strutturato, sostenuto da freschezza e tannino, con una trama profonda che può beneficiare dell'evoluzione in bottiglia. È un Barolo da accompagnare a tajarin con ragù o tartufo, brasati, arrosti, selvaggina e formaggi stagionati.
