“Not” di Paraschos è un Pinot Grigio in purezza dal Collio, che unisce eleganza e struttura. Macerazione sulle bucce per circa 8-10 giorni, fermentazione spontanea con lieviti indigeni, affinamento per lungo tempo in botti di rovere di Slavonia: si presenta con colore ambrato tendente al rame, profumi di frutta secca, agrumi canditi e miele, e al palato è vinoso, minerale, con splendida freschezza e tannini delicati.
