Baby di Butul è un vino bianco secco da Malvasia Istriana, prodotto nella regione della Primorska, in Slovenia. La famiglia Butul lavora nel territorio istriano, dove questo vitigno trova una delle sue espressioni più caratteristiche. Il vino nasce da una breve macerazione sulle bucce e da una fermentazione spontanea, senza aggiunta di enzimi o lieviti selezionati. Non viene filtrato, conservando un'impronta produttiva essenziale e poco interventista. La breve macerazione distingue Baby da una Malvasia vinificata esclusivamente in bianco, senza renderlo un vino a lunga estrazione. È una bottiglia da portare a tavola con verdure grigliate, pesce al forno, primi piatti alle erbe aromatiche e formaggi freschi. Un bianco sloveno che racconta il legame tra la Malvasia Istriana, il territorio costiero e le scelte di vinificazione della cantina.
