In the cellar, we preserve this heritage by avoiding invasive winemaking techniques. Fermentations are spontaneous, without the use of selected yeasts, and the wines are not fining or filtered. This isn't a profession of faith or a marketing strategy, but a choice of taste: we want wines with a distinctive personality, varying from year to year, and not standardized. The winery also grows vegetables and raises Mora Romagnola pigs in a semi-wild environment. We work with full respect for nature, excluding synthetic products, as part of a closed-loop winemaking approach aimed at preserving biodiversity.
The estate also includes the Casino di Pragatto, comprising two villas overlooking a centuries-old park, with spacious, bright rooms and suites. Here, we welcome guests with a swimming pool, tastings, breakfasts featuring local products, and the convenience of Bologna just minutes away.
