Antonio inherited a historic Aglianico vineyard planted in 1968 from which he produces high quality wines, unique and true, never predictable, an authentic expression of the concept of "terroir". Each bottle tells the company's story and is the result of daily commitment aimed at maintaining balance and preserving the surrounding natural ecosystem. Care, passion, dedication, no use of chemicals, neither in the vineyard nor in the cellar. Low-impact agronomic practices and the desire to bottle a truly "artisanal" wine, where the hand of man accompanies but does not replace, caresses but does not cover, caress but does not modify and where the vintage still commands.
PROCESSING AND PHILOSOPHY
The Garro Antonio Farm pays great attention to sustainability and the protection of the surrounding natural environment. The most stringent dictates of organic farming are applied in the vineyard, and the company is proudly certified according to these standards. The careful agronomic management in the various phenological phases of the vine, pruning, and manual tying give authenticity and quality to the grapes produced. >Harvest and selection of grapes The grapes are harvested by hand and, after careful selection, are placed in crates to then reach the cellar and the subsequent processing phases, in a few hours.
No oenological additives are used in the cellar. Spontaneous fermentation occurs, thanks to the indigenous yeasts present on the grapes, in large chestnut wood vats, without the use of temperature control. Manual punching down, done several times a day, and long maceration give the wines an intense color. A robust, but never sharp tannin emerges from the long refinement that takes place first in steel and then in the bottle. No sulphites are added in any of the processing and bottling phases. This means that the total sulfur values are below the limit of 100mg/liter.
