After making the vineyard accessible again, we investigated the varieties present, finding approximately 25 acres of red grapes divided between old clones of Montepulciano and Sangiovese and 25 acres of white grapes divided between Trebbiano, Malvasia and Moscatello.
In 2023, despite the low production, we decided to vinify and bottle because the grapes, when ripe, were in an optimal state, obtaining our first 1055 bottles (515 Viva la libertà and 540 Aureo)
In the cellar we work in an artisanal but conscious way, limiting to a minimum the use of oenological practices that could modify the aromatic and gustatory framework of these old varieties. The only standard we apply is the winemaking process that is annually replicated: the use of equipment in step with modern winemaking techniques, aided by spontaneous fermentations, without resorting to sterile filtration and adding a minimal amount of sulfur, only in the bottling phase, are our imprint for a young wine from old vineyards.
