PAP Wines

PAP Wines is a biodynamic winery and wine-growing domain on a volcano Mount St. George (Szent György-hegy), Balaton, Hungary.

The vineyards (4.8Ha) are on the South and East slopes of the volcano and the soil is basalt, loes and sand. In the vineyards we work with cover crops and with biodynamic vineyard care methods (certified since 2023). Our vines are between 4 and 50 years old, and around 20% are bush vines. The grapes are hand harvested and processed in our cellar. We work with indigenous yeasts and mature the wines on lees in barrique barrels with no intervention. The wines are racked once before bottling. Unfined. Unfiltered. Our winery has always worked with organic vineyard care methods, preparing herbal teas for vine protection. Since 3 years we have introduced more of the biodynamic methods.
