We started integrating animals (cows and chickens) to the estate in 2020 as we believe this is the only way to become self-sufficient and sustainable. Instead of chemical sprays, herbicides, and fertilizers, we use natural preparations for plant protection. It is a process that requires a constant presence, so human work is irreplaceable for us.
We employ the same holistic principles in our cellar as in our vineyards, hand harvesting healthy, top quality crops and crafting our musts with the least possible intervention in order to get lively, layered, terroir-driven wines. The wines are fermented spontaneously, are unfined, unfiltered and contain a low level of total SO2 .
