Caviste
The second of the separate vinifications of the unofficial subzone Lakomata, where Slavos also has his own vineyards in the Robola zone, is Pernari. Pernari is a vineyard located in the characteristic, poor, limestone soils of the Lakomatia area at an altitude of 600-650 metres and facing west, which is favoured by the afternoon sun and prolongs the ripening of the grapes. Rachi and Pernari follow the same winemaking protocol, in stainless steel tanks, without the addition of yeasts and with a long maceration period with the lees and bottling without clarification or filtering. Sharp but with a hint of more alcohol and volume on the palate, with strong mineral elements and a long finish. Needs at least two years in bottle to fully develop.
