About
Dornfelder from the Mosel, picked early so it stays at 10% with fresh acidity. Ten days on the skins, plunged by hand two to three times a day, which gives the deep colour. Fast, warm fermentation, then old barriques, unfiltered. It looks like a heavy red and drinks like a light one: dark blueberry, juicy blackberry and red currant. Serve it at 12 to 14 °C and let your guests guess. More about this wine: https://jpbwinemaking.com/weine/red-aquarius/
