We take care of our vines using natural methods, without chemical intervention, convinced that great wine is born from healthy soil and careful observation.
All our wines ferment in qvevri —traditional Georgian clay amphorae buried in the ground. Inside the qvevri, fermentation follows its own unpredictable path. Temperature variations and wild yeasts are never identical, and this is precisely what makes each wine unique. Every bottle is individual and tells its own story.
At Domaine Sekhnika , we cultivate 2.6 hectares of vines, which have been farmed organically and biodynamically for five years.
In the vineyard:
We exclusively use natural methods: organic compost, sulfur sprays, copper-based treatments (strictly controlled dosage), lime and other biological preparations.
No herbicides are used.
Most of the work in the vineyards is done by hand. Plowing is carried out every three years; otherwise, a tractor is used for spraying and basic soil management.
Soil fertility is maintained solely through humus and organic compost, applied every three years during plowing.
To protect the vines from insects and pests, we use pheromone traps and adhesive strips , without resorting to chemical insecticides.
In the cellar:
Our winemaking respects tradition , with 100% maceration in qvevri (buried amphora) during fermentation and aging, which can last several months.
Fermentation is spontaneous , with indigenous yeasts, without additives and under temperature control.
No filtration, binding or clarification is carried out.
Our wines are made solely from grapes and natural processes, reflecting the authenticity of our terroir and Georgia's millennia-old winemaking heritage .
