We utilize our own technical equipment in the vineyards, including tractors, sprayers, and cultivators. Most of the other work is carried out by hand.
Our cellar also complies with bio-organic standards, and our winemaking employs strictly minimal intervention methods. Our wines contain no additives; we filter only by racking. Spontaneous fermentation using wild yeast is a defining characteristic of our wines. Technologically, we use various methods, including direct pressing and utilizing qvevri for fermentation and storage, as well as stainless steel containers. For temperature control, we have a powerful air conditioner and strategically planted trees to create shade, reflecting sunlight and helping to regulate temperature.
Additionally, our grapes are handpicked and meticulously cleaned to remove any damaged berries. We often perform batonnage on several of our wines to enhance their honeyed flavors and creaminess.
Since 2024, both our vineyards and marani have been certified organic by CAUCASCERT, an Accredited Certifying Agent of USDA-NOP. We are also members of the Natural Wine Association, a collective of vine growers and winemakers dedicated exclusively to organic viticulture and natural winemaking.
