The plots that now yield their grapes were once fallow, fortunate enough to have seen no humans, let alone tractors, for several years. They are slowly coming back to life, with gentle and deliberately minimalist practices. From pruning to harvesting, everything is done to allow the vine to thrive and give its best. The few treatments used are organic or biodynamic. The harvest is done by hand and is a joyful experience (though it does make your back ache!), and in the cellar, crushing and pressing are done by hand. The wines live their own lives, with indigenous yeasts and no magic powders to ward off fears… just presence, patience, and energy.
