In the heart of the Puget-ville terroir in the Var region, the Croix-Rousse estate spans 5 hectares cultivated with exacting standards and respect for nature. Nestled between Mediterranean influences and Provençal hills at the foot of the Massif des Maures, the vineyard benefits from a protected environment that gives rise to precise, balanced wines deeply rooted in their terroir.
The grapes are harvested by hand to preserve their integrity and allow for rigorous selection. Mechanical work is deliberately limited, and tractor use is only occasional and reserved for strictly necessary interventions to protect the soil and promote microbial life.
The estate is certified organic and managed biodynamically. We use sensitive crystallization to determine the best interventions based on the vine's growth cycle and the climate (nettle, yarrow, and chamomile infusions, for example). Horn manure is also used in the spring and at the end of the harvest, as well as horsetail infusion before Easter. Sensitive crystallization also indicates the optimal time for harvesting and pruning in February and March.
In the cellar, we work with indigenous yeasts, without additives, with a light sulfiting before bottling and without filtration.
Each grape variety is harvested and vinified separately in different containers in order to develop a complex aromatic profile (stoneware jar, concrete egg, concrete vats, stainless steel vats, demi-muids of several wines, stoneware egg).
